Chocolate Brownie Power Cookies
You heard me. This recipe is unapologetically decadent, delicious and nutritious.
Chocolate Brownie Power Cookies.
Chock-full of fat (the good kind!), fiber and a wee bit of protein,these bad boys will keep you fueled through your workout and all the way to supper. An easily customizable recipe leaves room for you to add various nuts, seeds, dried fruit and so on. I originally found this recipe on my friend Jodi’s blog and have been playing with it for the past couple of years to create many tasty variations – these are a personal fave.
Ingredients:
4Tbsp Unsweetened Apple Sauce (or use a ripe banana)
2Tbsp Honey (or Maple Syrup)
1C Almond Butter (or other nut butter, aim for natural, ‘just nuts’)
6Tbsp Flour (I like almond flour, you could use any type you like)
1Tsp Baking Powder
1Tsp Ground Cinnamon
1/4Tsp Salt
1/4C Cocoa powder
1/4C Dried Cherries (dried cranberries, goji berries or other dried fruits will work too)
1/4C Hempseeds (optional, this is where you could try chia seeds, pumpkin seeds, sunflower seeds and so on)
1/4C Unsweetened Coconut (optional)
Method:
1) Preheat oven to 350
2) Mix the dry ingredients (flour, baking powder, nuts, seeds, dried fruit and coconut)
3) Add the wet ingredients
4) Drop dough in desired size cookies onto a parchment-lined sheet tray (they won’t spread out too much depending on what type of flour you use)
5) Bake for 10-12mins, they’ll be soft on top but will firm up upon cooling
6) Pack 1-2 cookies in your briefcase/gym bag/school tote to keep your energy up pre or post workout.
